Avial Kerala style

Avial, A delicacy from state of Kerala, is a flavourful recipe with mixed vegetables and grated coconut masala. Garnished with curry leaves and coconut oil which gives the recipe a distinct aroma and taste.

Ingredients : Yam (Suran) 250 gms, Snake Gourd (Padval) 250 gms, Red Pumpkin 250 gms, White Pumpkin 250 gms, Green Long Beans 1/2 cup, Carrot 2 nos, Raw Banana 3 nos, DrumSticks 3 nos, Turmeric Powder 1/2 teaspoon, Salt 1 1/2 teaspoon or as per taste, Water 1/2 cup, Green Chilli 5-6 nos, Curry Leaves.

For Masala: Grated Coconut 2 cup, Cumin seeds 1 1/2 teaspoon, Green Chilli 5-6 nos, Turmeric Powder 1/2 teaspoon, Curd 1 cup.

For Garnishing : Coconut Oil 2 tablespoon, Curry Leaves for garnishing.
